Paella as curated by Penelope Casas

The writings of the late Penelope Casas were a crucial to bringing Spanish cuisine to mainstream USA. The reason she was so influential was a distinct passion for Spanish food, she knew what is was supposed to taste like, and could write about it in a lucid fashion. This book shines with the enthusiasm Casas had for paella dishes, and it provides great reading in addition to great recipes. You only need one book on paella cookery - this very one. Highly recommended.
